Curry z ciecierzycą

Uwielbiam curry. Dziś przedstawiam je w wersji wegetariańskiej z cieciorką zamiast mięsa.  Niezbyt finezyjne, proste danie. Najlepsza ze świeżym imbirem i kolendrą, jednak z suszonymi równie smaczna.

Składniki:

  • 3/4 szklanki suchej ciecierzycy (lub 2 puszki konserwowej)
  • 500g przecieru pomidorowego
  • 2 cebule
  • 2 łyżki oliwy lub oleju rzepakowego
  • torebka herbaty
  • łyżeczka nasion kminku, kurkumy i imbiru
  • ząbek czosnku, kolendra, liść laurowy, sól i pieprz
Przygotowanie:

Przed gotowaniem ciecierzycę należy dobrze wymoczyć-powinna stać zalana wodą 10-12 godzin. Następnie do garnka wlać ok. 2 szklanek wody, torebkę herbaty i liść laurowy, zagotować. Gdy zawrze, wyciągnąć herbatę, wsypać namoczoną i przepłukaną ciecierzycę i gotować ok. 1,5 godziny. Odcedzić, wlewając płyn do osobnej miski. Wyciągnąć liść laurowy. Cebulę posiekać. Połowę oliwy rozgrzać na patelni, zeszklić jedną cebulę, następnie dodać kolendrę i połowę ciecierzycy. Krótko podsmażyć i przełożyć do garnka. Potem na patelni rozgrzać pozostałą oliwę, dodać posiekany lub przeciśnięty przez praskę czosnek, kminek, imbir i kolendrę, krótko podsmażyć. Dodać drugą cebulę i kurkumę, smażyć, często mieszając, do momentu, aż cebula będzie złota. Wlać przecier pomidorowy, doprowadzić do wrzenia i gotować ok. 3-5 minut. Całość dodać do garnka razem z resztą ugotowanej ciecierzycy. Dolać płyn z gotowania ciecierzycy w takiej ilości, by sos był gęsty i gotować kilka minut, często mieszając. Podawać z kaszą kuskus.





Ingredients: 

  • 3/4 cup dry chickpeas (or 2 cans canned) 
  • 500g of tomato puree 
  • 2 onions 
  • 2 tablespoons olive or canola oil 
  • tea bag 
  • a teaspoon cumin seeds, turmeric and ginger 
  • clove of garlic, coriander, bay leaf, salt and pepper
Preparation:

Before cooking the chickpeas should soaked in water for 10-12 hours. Then, pour about 2 cups of water, a tea bag and bay leaf into the pot and bring it to a boil. When it boils, remove the tea bag, add the soaked and rinsed chickpeas and cook for about 1.5 hours. Afterwards pour out the water into a separate bowl. Pull out the bay leaf. Chop the onions. Heat half the oil in a pan, fry one onion, then add the coriander and half the chickpeas. Fry briefly and put into the pot. Then in a pan heat the rest olive oil, add chopped or crushed garlic, cumin, ginger and coriander, fry briefly. Add the rest of onion and turmeric and fry, stirring frequently, until onion is golden. Pour the tomato puree, bring to a boil and cook for about 3-5 minutes. The whole add to the pot together with the rest of the cooked chickpeas. Add the water from boiling a chickpeas in such an amount that the sauce was thick and cook a few minutes with frequent stirring. Serve with couscous.
